I was in a Buddhist temple and noticed that there were symbols e-v-e-r-y-w-h-e-r-e (dharma wheel, lotus flowers, dragons)... What's the purpose of weaving symbols into seemingly every possible nook and cranny?

A good bit of it is cultural - i.e. using a culture's aesthetic in decorating one's temple in that culture. That is why you find some temples are very ornate, and some are very spartan or spare.
